Simple Cocktail Party Canapes with Chef Jimmy Chok

Menu
• Mushroom Tartlet with Truffle Oil
• Smoked Salmon with Avruga Roe
• Seared Tuna with Avocado Salsa
• Poached Prawn and Mango
• Feta Cheese and Tomato Skewer
• Bellini
• Lychee Martini
 

It was literally a party in The Kitchen with Chef Jimmy Chok whipping up a storm for 12 of our guests as we learnt how to create simple canapés that taste and look impressive!

I’ve been for other classes by Chef Jimmy Chok and his mantra is always to give his guests the best value and most importantly walk away with a sense of confidence – cooking is not as hard as it’s made out to be! Let’s have a look at what we learnt that evening!

Before I go on, I just want to say that the great thing about our classes in the evening is that it’s a class AND dinner rolled into one! For this class it was class AND party rolled into one!

To get the party going, Chef Jimmy Chok started us with a Bellini each (some of us even had seconds):


Blended peaches topped up with some bubbly from Moet

First up on the menu – Mushroom Tartlets with Truffle Oil – presenting the making of:




And the rest of the delectable delights for the evening:


Seared Tuna with Avocado Salsa (topped with Avruga Caviar and Baby Shiso Leaf)


Poached Prawn with Mango garnished with Avruga Roe and Microherbs (Jimmy’s own personal stash)


Feta Cheese with Tomato Skewer (wrapped wtih Basil)

Now this was no ordinary Tomato – they were tomatoes from Japan $6 for a tiny box of 15 tomatoes. Yummy!

We ended off the evening with a glass of Lychee Martini each:
